Grandma’s Peanut Butter Cookies

These peanut butter cookies will not leave you disappointed! They are soft and chewy with a rich peanut butter flavor. You can do these as crisscross cookies or if you prefer with chocolate on top, they taste great either way! They are a delicious year-round treat!

How to Make:

Ingredients:

  • Shortening (I like to use white crisco shortening)
  • Granulated sugar
  • Light brown sugar
  • Eggs
  • Vanilla extract
  • Peanut butter
  • All purpose flour
  • Baking soda
  • Baking powder
  • Salt

Directions:

  • Preheat the oven to 350°F
  • In a large bowl, cream together shortening and sugars
  • Next, add the eggs 1 at a time and mix after each addition
  • Add vanilla and mix again
  • Stir in the peanutbutter
  • In a seperate small bowl, whisk together the dry indregients
  • Gradually add the dry ingredients to the wet ingredients and mix until combined
  • Drop by rounded tablespoonful onto a cookie sheet lined with parchment paper
  • Press cookies lightly with a floured fork to make a criss cross pattern
  • Bake for 8 to 10 minutes
  • Allow cookies to cool on the hot tray for 2 minutes and then transfer to a cooling rack

If you are choosing to put chocolate on top, skip the criss cross instruction and keep them rounded on the tray to cook. Make sure to peel the chocolate wrappers off while the cookies are in the oven so you are ready to place the chocolate immediately when they come out of the oven. This step is key when the cookies are still hot so the chocolate is easy to push in and will mend to the cookie as they cool.

***Note: This is the only recipe I will use shortening instead of butter and I have to say, after trying many others versions, the shortening is a must… it adds the perfect flavor to the cookies that you just cannot replace. I use white crisco shortening for my cookies.
