Rainbow Sprinkle Sugar Cookies

These rainbow sprinkle cookies are irresistibly delicious and will be become a new family favorite! They are the perfect soft and chewy sugar cookie with a splash of rainbow color! They are the most requested cookie for our family gatherings.

This recipe is quick and easy to make and they freeze well too!

How to Make

Ingredients:

  • Salted butter, softened at room temperature
  • Granulated sugar
  • Packed light brown sugar
  • Vanilla extract
  • Large egg
  • All purpose flour
  • Baking soda
  • Instant vanilla pudding mix
  • Salt
  • Rainbow sprinkles

Directions:

  • Preheat the oven to 350 degrees
  • Start by creaming the butter and sugars using an electric mixer
  • Add in vanilla extract and the egg, mix until combined
  • In a small bowl, whisk together the dry ingredients
  • Add the dry ingredients to the wet ingredients and mix until combined
  • Stir in sprinkles
  • Using a small cookie scoop, arrange cookies on a tray covered in parchment paper
  • Cook for 8-10 minutes, just until the edges are slightly golden
  • Allow to cool on hot tray for 2 minutes before transferring to cooling rack

They are perfect to make ahead for any occasion and freeze. In order to freeze, let the cookies come to room temperature and place in a freezer ziplock bag or airtight container. To thaw, take the cookies out of the freezer a few hours before consuming. Once thawed, they taste like they are fresh baked that day!

  • 2 cups flour
  • 1 tsp baking soda
  • 3 tbsp instant vanilla pudding mix
  • 1/2 tsp salt
  • 1/2 cup rainbow sprinkles
