Gluten Free Banana Crumb Muffins

Looking for a delicious gluten free recipe? Look no further! You would never know these muffins are gluten free by the taste of them – they have a delicious sugary crumb topping with a soft, moist, and cake-like bottom.

My brother has a gluten allergy, but loves my baking so I am always looking to come up with new recipes that he can enjoy at family gatherings too! This one is a winner for sure – you won’t be disappointed!

Gluten Free Banana Crumb Muffins

Ingredients:

  • Batter:
    • 1/4 cup butter, softened
    • 3/4 granulated sugar
    • 2 eggs
    • 1 tsp vanilla extract.
    • 1/2 cup milk
    • 2 tablespoons sour cream
    • 2-3 ripe bananas, mashed
    • 2 cups gluten free flour
    • 2 tsp baking powder
    • 1/2 tsp salt
    • 1 tsp cinnamon
  • Crumb Topping:
    • 1/2  cup gluten free flour
    • 1/3  cup granulated sugar
    • 3/4 teaspoon cinnamon
    • 1/4 cup of butter (softened)

Directions:

  • Preheat the oven to 350 degrees. Prepare muffin tin – grease or line with muffin cups
  • For the batter, in a large bowl, cream butter and sugar. Add eggs and mix again. Mix in the remaining wet ingredients – vanilla, milk, sour cream and mashed bananas
  • In a small bowl, whisk together dry ingredients. Add dry ingredients to the bowl with the wet ingredients and mix until combined
  • For the crumb topping, in a seperate bowl, whisk together flour, sugar and cinnamon. Add softened butter and use a fork to combine to make crumbs
  • Pour batter into prepared muffin tin and top with crumbs. Yields 12 muffins
  • Cook for 25 to 28 minutes or until inserted toothpick comes out clean
  • Allow to cool in muffin tin for 5-10 minutes and then transfer to a cooling rack.
  • Can be enjoyed warm or room temperature!

Tips to Freeze:

If you plan to freeze, let the muffins come to room temperature fully before putting in a freezer safe container or bag. After freezing, you can allow them to thaw at room temperature for a few hours before consuming or reheat in the microwave for 30 seconds (time for just 1 muffin, increase if you are reheating multiple at once).
