Healthy and Easy Baked Oatmeal Mixed Berry Muffins

These mixed berry baked oatmeal muffins are an easy, delicious and healthy breakfast! Made with wholesome ingredients, they are a great way to start any day! They are perfect to make ahead, store in the freezer and warm up in the mornings.

You can enjoy them plain, or add a small amount of syrup on top too. My family cannot get enough of these!

How to Make

Ingredients

  • Cooked strawberries and blueberries (or mixed berries of choice) with juice from cooking
  • Old fashioned oats (can use quick cooking if preferred)
  • Milk
  • Light brown sugar
  • Maple syrup
  • Large egg
  • Vanilla extract
  • Ground cinnamon
  • Baking powder
  • Salt
  • Chopped walnuts, if desired

Directions

  • Cook frozen strawberries and blueberries in a small saucepan over medium-low heat for 10-12 minutes, stirring frequently (if using whole strawberries, cut up after cooked)
  • Preheat the oven to 350°F
  • Combine all ingredients in a large bowl
  • Divide batter into muffin tin (grease pan or use muffin cup liners) – batter will fill 12 muffin cups about 3/4 full
  • Cook for about 22-24 minutes or until toothpick comes out clean

Is this recipe gluten free?

Yes! This recipe is made with oats, not flour so if you have a gluten allergy or are looking for a healthier option, this is a great one!

Can these muffins be frozen?

Yes! Allow to fully cool after baking before placing in a freezer bag or container. I love to make these ahead for the week and freeze, they reheat perfectly like they were made fresh that day!

Are old fashioned or quick cooking oats better?

I have made this recipe with both old fashion oats and quick cooking oats many times and they are equally delicious. The biggest difference is the texture, it just comes down to your personal preference!
