Soft and Chewy Oatmeal Cookies
These oatmeal cookies are the perfect soft, chewy and flavor packed combination. You can’t go wrong with a classic! They are great for any occasion and freeze well if you are looking to make ahead.
They can be enjoyed plain, but are also great if you are looking to make an oatmeal cookie sandwich with fresh icing inside too!
How to Make:
Ingredients Needed
- Salted butter, softened at room temperature
- Packed light brown sugar
- Granulated sugar
- 1 large egg
- Vanilla extract
- All purpose flour
- Salt
- Baking soda
- Ground cinnamon
- Oatmeal (I prefer to use quick cooking, but you can also use original)
Directions
- Preheat the oven to 350 degrees
- Cream together the butter and sugars in a large mixing bowl using an electric mixer
- Add in egg and vanilla extract and mix again
- Mix in the dry ingredients (except the oatmeal)
- Last, add the oatmeal and mix until combined
- Scoop cookies (rounded tablespoon) and place on a baking sheet lined with parchment paper
- Cook for 8-10 minutes, edges will be slightly golden
- Allow cookies to cool on the tray for 5 minutes before transferring to cooling rack

YES! These cookies freeze and thaw like they were cooked that day. In order to freeze, allow cookies to come to room temperature and place in a freezer safe container or freezer ziplock. To thaw, allow cookies to come to room temperature a few hours before consuming.

- 2 cups oatmeal (quick cooking)
