Pumpkin Waffles

If you love pumpkin, these are the waffles for you! They cook soft and fluffy with crispy edges. The burst of flavor screams fall, but you are sure to enjoy them year round. My family can’t get enough of these waffles.

The waffles freeze and reheat very well too.

Best served warm with maple syrup, whipped cream, and a dusting of cinnamon sugar on top.

Ingredients needed:

  • All-purpose flour
  • Granulated sugar
  • Salt
  • Baking powder
  • Pumpkin pie spice
  • Cinnamon
  • Eggs
  • Whole milk
  • Pumpkin puree
  • Butter, melted
  • Vanilla extract
  • Topping: 1 tablespoon of granulated sugar mixed with 1/2 teaspoon of cinnamon

Directions:

  • In a medium bowl, mix together the dry ingredients including the flour, sugar, salt, baking powder, pumpkin pie spice, and cinnamon.
  • In a separate small bowl, whisk together the wet ingredients – eggs, milk, pumpkin puree, melted butter and vanilla extract.
  • Pour wet ingredients into the bowl with the dry mixture and mix to combine. Be very careful not to over mix the batter, just mix to combine.
  • Cook according to waffle iron instructions (varies depending on size of waffle iron)
  • Serve while warm, topped with syrup, whipped cream and a light dusting of cinnamon sugar

  • 4 tsp baking powder
  • 1 tsp pumpkin pie spice

  • 1 1/2 cups milk
  • 1/2 cup pumpkin puree
  • 4 tbsp butter (melted)
  • 1 tsp vanilla extract

Optional cinnamon sugar topping

  • 1 tbsp granulated sugar
  • 1/2 tsp ground cinnamon
